Ingredients
- 150 g Vine leaves (brined)
- 50 g Basmati rice
- 80 g Chickpeas (tinned, drained)
- ¼ onion Onion
- ¼ tomato Tomatoes
- 10 g Parsley
- 5 g Mint
- ¾ tbsp Olive oil
- 8 g Pine nuts
- ¼ lemon Lemons
- ¼ tsp Salt
Method
- Mix the rice, mashed chickpeas, onion, tomato, herbs and half the oil with a pinch of salt.
- Lay out the vine leaves and place a spoonful of filling on each; roll up tightly, folding in the sides.
- Pack the rolls snugly into a pot, pour over the lemon juice, remaining oil and enough water to just cover.
- Weigh down with a small plate, cover and simmer gently for 30 minutes until the rice is tender. Scatter with pine nuts.
