Bossam (Korean boiled pork wraps)
Tender simmered pork slices wrapped in crisp lettuce with a spicy dipping sauce.

Ingredients
- 180 g Pork tenderloin
- 100 g Lettuce
- 1 tbsp Doenjang (Korean soybean paste)
- 1½ tsp Gochugaru (Korean chilli flakes)
- 2 cloves Garlic
- 6 g Ginger
- 65 g Jasmine rice
- ¾ tsp Sugar
- 1 tsp Toasted sesame oil
Method
- Cook the rice according to packet instructions.
- Simmer the pork with the ginger and half the garlic in water to cover for 25-30 minutes until tender; slice thinly.
- Mix the doenjang, gochugaru, remaining garlic, sugar and sesame oil into a dipping sauce.
- Arrange the sliced pork and lettuce leaves on a platter.
- Wrap slices of pork and a little rice in lettuce leaves with a dab of the sauce to eat.
