Carnitas bowl
Slow-cooked shredded pork with rice, black beans, lime and coriander.

Ingredients
- 150 g Pork tenderloin
- 60 g Brown rice
- 100 g Black beans (tinned, drained)
- ¼ onion Onion
- ¼ lime Limes
- 5 g Coriander
- ½ tbsp Sunflower oil
- ½ tsp Ground cumin
- ¼ tsp Salt
Method
- Simmer the brown rice in twice its volume of water for 25 minutes until tender.
- Season the pork with cumin and salt, then simmer gently in water to cover for 25 minutes until very tender; shred.
- Heat the oil in a hot pan and crisp the shredded pork for 5 minutes, stirring occasionally.
- Warm the black beans, and serve the pork over rice and beans with onion, lime and coriander.
