Char kway teow with prawns
Smoky wok-fried flat rice noodles with prawns, egg and beansprouts.

Ingredients
- 90 g Rice noodles
- 130 g Prawns
- 1 egg Eggs
- 70 g Bean sprouts
- 2 cloves Garlic
- ¾ tbsp Soy sauce (reduced salt)
- 1 tsp Sugar
- ¾ tbsp Sunflower oil
- 12 g Spring onions
Method
- Heat the oil in a very hot wok and stir-fry the garlic and prawns for 2 minutes until pink.
- Push to one side, crack in the egg and scramble briefly, then mix through.
- Add the noodles, soy sauce and sugar, tossing for 4 minutes until well coated and slightly charred.
- Fold through beansprouts and spring onion for 1 minute.
- Serve immediately while hot.
