Nasi lemak with sambal ikan bilis

Ingredients
- 55 g Jasmine rice
- 70 ml Light coconut milk
- 1 egg Eggs
- 15 g Anchovies
- ¼ onion Onion
- ¾ tsp Shrimp paste (belacan)
- 1½ chillis Red chillies
- 12 g Peanuts
- ¼ cucumber Cucumber
- ¾ tsp Sugar
- ½ tbsp Sunflower oil
Method
- Rinse the rice and cook with the coconut milk and a splash of water in a covered pan for 20 minutes.
- Boil the egg for 8 minutes, then cool, peel and halve.
- Blend the chilli, shrimp paste and half the onion to a paste, fry in the oil for 5 minutes until fragrant.
- Stir the anchovies and remaining onion into the sambal, cook 5 minutes, season with sugar.
- Plate the coconut rice with the sambal, boiled egg, peanuts and cucumber.
