Doro wat (Ethiopian berbere chicken stew)
Ethiopia's classic slow-cooked berbere chicken stew with hard-boiled egg.

Ingredients
- 150 g Chicken thighs (boneless)
- 1 egg Eggs
- 1 onion Onion
- 2 cloves Garlic
- 5 g Ginger
- 1¼ tbsp Berbere spice blend
- ½ tbsp Butter
- 100 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Cook the onion in a dry pan for 10 minutes, stirring often, until softened and dark.
- Add the butter, garlic, ginger and berbere and cook for 2 minutes until fragrant.
- Stir in the stock and chicken, cover and simmer for 25 minutes until the chicken is very tender.
- Nestle in the whole boiled egg for the last 5 minutes to warm through, then season and serve.
