Shiro wat (Ethiopian chickpea flour stew)
Silky spiced chickpea flour stew, simmered until glossy and smooth.

Ingredients
- 70 g Gram flour (besan)
- ½ onion Onion
- 60 g Chopped tomatoes (tinned)
- 1 clove Garlic
- 3 g Ginger
- 2 tsp Berbere spice blend
- ½ tbsp Sunflower oil
- 200 ml Vegetable stock
- ¼ tsp Salt
Method
- Fry the onion in the oil for 8 minutes until golden, add the garlic, ginger and berbere and cook for 1 minute.
- Stir in the tomatoes and cook for 4 minutes.
- Whisk the besan into the stock until smooth, then pour into the pan, whisking constantly.
- Simmer for 10 minutes, whisking often, until thickened and glossy. Season with salt.
