Misir wot (Ethiopian spiced red lentils)

Ingredients
- 80 g Red lentils (masoor dal)
- ¾ onion Onion
- 80 g Chopped tomatoes (tinned)
- 1 clove Garlic
- 4 g Ginger
- 2¾ tsp Berbere spice blend
- ½ tbsp Sunflower oil
- 150 ml Vegetable stock
- ¼ tsp Salt
Method
- Fry the onion in the oil for 10 minutes over medium heat until deeply golden.
- Add the garlic, ginger and berbere and cook for 1 minute until fragrant.
- Stir in the tomatoes and cook for 5 minutes, then add the lentils and stock.
- Cover and simmer for 18 minutes, stirring occasionally, until the lentils are soft and the stew has thickened.
