Tibs (Ethiopian sautéed beef and peppers)
Quick-fried spiced beef with onion and peppers, served with injera.

Ingredients
- 150 g Sirloin steak
- ¾ onion Onion
- ½ pepper Bell peppers
- 1 clove Garlic
- 4 g Ginger
- ½ tbsp Sunflower oil
- 1¼ tsp Berbere spice blend
- ¾ injera Injera (teff flatbread)
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Heat the oil until very hot and sear the beef strips for 2 minutes until browned.
- Add the onion, pepper, garlic and ginger and stir-fry for 6 minutes until softened.
- Stir in the berbere and cook for 1 minute more, season with salt and pepper.
- Serve hot with the injera alongside.
