Ingredients
- 1¼ injeras Injera (teff flatbread)
- 2 eggs Eggs
- ½ onion Onion
- ¾ tomato Tomatoes
- 1¾ tsp Berbere spice blend
- ½ tbsp Butter
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Melt the butter and fry the onion for 5 minutes until soft, add the berbere and cook for 1 minute.
- Stir in the tomato and cook for 4 minutes until pulpy.
- Add the torn injera and toss to coat well in the sauce for 2 minutes.
- Push to one side, crack in the eggs, scramble until just set, then fold through. Season and serve.
