Ingredients
- 120 g Pork tenderloin
- 200 g Black beans (tinned, drained)
- ½ onion Onion
- 2 cloves Garlic
- ½ orange Oranges
- 50 g Brown rice
- ½ tbsp Sunflower oil
- ¼ tsp Salt
Method
- Simmer the brown rice in twice its volume of water for 25 minutes until tender.
- Warm the oil and brown the pork cubes for 6 minutes.
- Add the onion and garlic, cook 5 minutes, then add the black beans and a splash of water and simmer 15 minutes.
- Serve over the rice with orange slices alongside, as is traditional.
