Ingredients
- 180 g White fish fillets
- 150 ml Light coconut milk
- ¾ tomato Tomatoes
- ½ pepper Bell peppers
- ½ onion Onion
- 2 cloves Garlic
- ¼ lime Limes
- 8 g Coriander
- ½ tbsp Sunflower oil
- 50 g Brown rice
- ¼ tsp Salt
Method
- Simmer the brown rice in twice its volume of water for 25 minutes until tender.
- Warm the oil and cook the onion, garlic and pepper for 6 minutes until softened.
- Add the tomato and coconut milk, and simmer 8 minutes.
- Nestle in the fish and simmer gently for 8 minutes until just cooked; finish with lime and coriander, and serve over the rice.
