Black-eyed pea fritters (acarajé style)
Pan-fried black-eyed pea fritters spiced with onion and chilli, Bahia style.

Ingredients
- 150 g Black beans (tinned, drained)
- ¼ onion Onion
- 2 cloves Garlic
- 1 chilli Green chillies
- ¾ tbsp Sunflower oil
- ¼ tsp Salt
- 5 g Coriander
Method
- Mash the black beans with the onion, garlic and chilli into a thick, coarse batter; season with salt.
- Shape into 4 small patties.
- Fry in the oil over medium heat for 4 minutes per side until deep golden and crisp.
- Scatter with coriander and serve warm.
