A mild, golden coconut milk fish stew scented with ginger and green chilli.

Ingredients
- 50 g Basmati rice
- 150 g White fish fillets
- 120 ml Coconut milk
- ½ onion Onion
- ¼ tomato Tomatoes
- 4 g Ginger
- ½ chilli Green chillies
- 2 g Curry leaves
- ½ tbsp Coconut oil
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Cook the rice until tender; set aside.
- Heat the coconut oil, soften the onion, ginger and green chilli for 6 minutes.
- Add turmeric and tomato, and cook 4 minutes until softened.
- Pour in the coconut milk and bring to a gentle simmer, then add the fish and curry leaves.
- Simmer gently 8 minutes until the fish is just cooked; season with salt and serve with the rice.
