Idiyappam with vegetable stew
Soft steamed rice noodle cakes with a fragrant coconut milk vegetable stew, no onion needed.

Ingredients
- 80 g Rice flour
- 100 ml Coconut milk
- 40 g Green beans
- 30 g Green peas
- ½ chilli Green chillies
- 2 g Curry leaves
- ½ tsp Cinnamon
- ½ tbsp Coconut oil
- ¼ tsp Salt
Method
- Knead the rice flour with hot water and a little salt into a soft, smooth dough.
- Press the dough through an idiyappam press into small woven discs and steam for 6-8 minutes.
- Warm the coconut oil, add cinnamon and green chilli, then the green beans and peas with a splash of water; simmer 8 minutes.
- Pour in the coconut milk and curry leaves, season with salt and simmer gently for 4 minutes without boiling hard.
- Serve the idiyappam warm with the stew.
