Haemul pajeon (Korean seafood pancake)
A crisp savoury pancake packed with spring onion, prawns and squid.

Ingredients
- 90 g Prawns
- 70 g Squid
- 70 g Spring onions
- 60 g Plain flour
- ½ egg Eggs
- ¾ tbsp Sunflower oil
- ½ tbsp Soy sauce (reduced salt)
- ¼ tbsp Rice vinegar
Method
- Whisk the flour with 90ml water and the egg into a smooth batter.
- Lay the spring onion lengths in a hot, oiled pan, then pour the batter over to cover.
- Scatter the prawns and squid over the batter and cook for 4-5 minutes until golden underneath.
- Flip carefully and cook for a further 3-4 minutes until the seafood is cooked through and the pancake is crisp.
- Slice into wedges and serve with soy sauce and rice vinegar for dipping.
