Japanese beef curry
A mellow, gently spiced Japanese curry with tender braised beef, carrot and potato.

Ingredients
- 160 g Stewing beef
- ¾ onion Onion
- ¾ carrot Carrots
- 90 g Potatoes
- 1 tbsp Curry powder
- 60 g Jasmine rice
- ½ tbsp Tamari (gluten-free)
- ½ tbsp Sunflower oil
- 250 ml Vegetable stock
- 1 tbsp Cornflour
Method
- Cook the rice according to packet instructions.
- Brown the beef in the oil for 4-5 minutes, then add the onion and carrot and soften for 5 minutes.
- Stir in the curry powder and cook for 1 minute until fragrant.
- Add the stock, tamari and potato, cover and simmer for 25 minutes until the beef is tender.
- Thicken with the cornflour mixed in a little water and serve over the rice.
