Jerk chicken
Smoky-spiced grilled chicken thighs with rice and sweet fried plantain.

Ingredients
- 180 g Chicken thighs (boneless)
- ½ tsp Cinnamon
- ¾ tsp Chilli flakes
- 1 tsp Dried thyme
- 2 cloves Garlic
- ¼ lime Limes
- 60 g Brown rice
- 80 g Plantain (ripe)
- ½ tbsp Sunflower oil
- ¼ tsp Salt
Method
- Simmer the brown rice in twice its volume of water for 25 minutes until tender.
- Mix the cinnamon, chilli flakes, thyme, garlic, lime juice and salt, and rub over the chicken; marinate 15 minutes.
- Grill or pan-sear the chicken for 8 minutes per side until charred and cooked through.
- Fry the plantain slices in the oil for 3 minutes per side until golden, and serve alongside the chicken and rice.
