Pescado frito caribeño
Pan-fried white fish with garlic and lime, served with sweet plantain.

Ingredients
- 180 g White fish fillets
- ½ lime Limes
- 2 cloves Garlic
- 1 tsp Dried thyme
- 100 g Plantain (ripe)
- ½ tbsp Sunflower oil
- ¼ tsp Salt
- 5 g Coriander
Method
- Season the fish with garlic, thyme and salt.
- Heat half the oil and pan-fry the fish for 4 minutes per side until golden and just cooked; set aside.
- In the same pan, fry the plantain slices in the remaining oil for 3 minutes per side until golden.
- Serve the fish with the plantain, a squeeze of lime and coriander.
