Jok moo (Thai rice porridge with pork)
Silky rice porridge simmered with minced pork, ginger and a soft egg.

Ingredients
- 40 g Jasmine rice
- 90 g Pork tenderloin
- 1 egg Eggs
- 8 g Ginger
- 2 cloves Garlic
- 10 g Spring onions
- 1 tsp Toasted sesame oil
- ½ tbsp Soy sauce (reduced salt)
- ½ tsp Black pepper
Method
- Rinse the rice and simmer in 6 cups of water for 25 minutes, stirring often, until broken down and creamy.
- Stir the minced pork into the porridge in small pieces and simmer 6 minutes until cooked through.
- Season with soy sauce, crack in the egg and stir through to poach for 1 minute.
- Ladle into a bowl, top with ginger, spring onion and a drizzle of sesame oil.
