Khai jiao (Thai omelette) with rice

Ingredients
- 45 g Jasmine rice
- 3 eggs Eggs
- 10 g Spring onions
- ½ tbsp Sunflower oil
- ½ tbsp Soy sauce (reduced salt)
- ½ tsp Black pepper
Method
- Cook the rice in a covered pan with water until tender, about 20 minutes.
- Beat the eggs hard with a fork until frothy, stir in spring onion and pepper.
- Heat the oil in a small pan until shimmering, pour in the egg and fry 2 minutes until puffed and golden underneath.
- Flip carefully, cook 1 more minute, then slide onto the rice and drizzle with soy sauce.
