Lu rou fan (Taiwanese braised pork rice)

Ingredients
- 150 g Pork tenderloin
- 50 g Mushrooms
- 70 g Jasmine rice
- 1 shallot Shallots
- 2 cloves Garlic
- 1 tbsp Tamari (gluten-free)
- 1½ tsp Sugar
- 1 tsp Chinese five spice
- ½ tbsp Sunflower oil
- 150 ml Vegetable stock
- 1 egg Eggs
Method
- Cook the rice according to packet instructions and soft-boil the egg for 7 minutes, then peel.
- Fry the shallot in the oil for 4-5 minutes until deep golden and fragrant.
- Add the garlic, mushroom and pork, and fry for 4-5 minutes, breaking up the pork, until browned.
- Stir in the tamari, sugar, five-spice and stock, and simmer gently for 20 minutes until rich and glossy.
- Spoon over the rice and top with the halved soft-boiled egg.
