Moroccan-style spiced eggs in tomato sauce

Ingredients
- 2 eggs Eggs
- 200 g Chopped tomatoes (tinned)
- ½ pepper Bell peppers
- ½ onion Onion
- 2 cloves Garlic
- ½ tbsp Olive oil
- ¾ tsp Ground cumin
- ½ tsp Paprika
- ¼ tsp Chilli powder
- 5 g Coriander
- ¼ tsp Salt
Method
- Warm the oil and cook the onion and pepper for 8 minutes until softened.
- Add the garlic and spices and cook for a minute, then add the tomato tin and simmer for 10 minutes until thickened.
- Make small wells in the sauce and crack in the eggs.
- Cover and cook for 5 minutes until the whites are set but the yolks are still soft. Finish with coriander.
