Ingredients
- 70 g Rice flour
- 20 g Fresh coconut
- ½ tbsp Sunflower oil
- ¼ tsp Salt
Method
- Blend the rice flour, coconut and salt with plenty of water into a very thin, milk-like batter.
- Heat a flat pan and pour a thin layer of batter, swirling to cover the surface.
- Cover and cook for a minute until the edges lift and it turns opaque and soft.
- Fold into a half-moon or quarters without flipping.
- Serve warm, plain or with a light coconut chutney.
