Pork simmered low and slow in garlicky vinegar-soy sauce until tender and sticky.

Ingredients
- 170 g Pork tenderloin
- 2 tbsp Vinegar
- 1¼ tbsp Soy sauce (reduced salt)
- 4 cloves Garlic
- ¾ tsp Black pepper
- 60 g Jasmine rice
- ½ tbsp Sunflower oil
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Combine the pork, vinegar, soy sauce, garlic and pepper in a pot and bring to a simmer without stirring for 5 minutes.
- Cover and simmer 25 minutes until the pork is tender.
- Uncover, add the oil, and simmer 5 minutes more to reduce the sauce until glossy and sticky.
- Serve with the rice.
