Lugaw with tofu (Filipino ginger rice porridge)
Ginger-scented rice porridge with golden tofu and crispy garlic oil.

Ingredients
- 45 g Jasmine rice
- 150 g Firm tofu
- 15 g Ginger
- 3 cloves Garlic
- 10 g Spring onions
- ¾ tbsp Soy sauce (reduced salt)
- ½ tbsp Sunflower oil
- ¼ lime Limes
Method
- Fry the garlic in the oil until golden and crisp, then set aside, keeping the flavoured oil in the pot.
- Pan-fry the tofu cubes in the same pot for 4 minutes until golden, then set aside with the garlic.
- Add the ginger to the pot with the rice and 700ml water, simmer 20 minutes, stirring occasionally, until the rice breaks down.
- Season with soy sauce and stir the tofu back through to warm.
- Ladle into a bowl, top with the crispy garlic, spring onion and a squeeze of lime.
