Simplified samgyetang (Korean chicken soup)
A restorative, gently sweet Korean chicken and rice soup with garlic and dates.

Ingredients
- 170 g Chicken thighs (boneless)
- 50 g Jasmine rice
- 3 cloves Garlic
- 8 g Ginger
- 1¼ dates Dates
- 10 g Spring onions
- ¼ tsp Salt
- 250 ml Vegetable stock
Method
- Rinse the rice and place in a pot with the chicken, garlic, ginger, dates and stock.
- Bring to the boil, then reduce to a gentle simmer, cover and cook for 25-30 minutes until the chicken is tender and the rice is soft.
- Season with salt to taste.
- Ladle into bowls and scatter with spring onion to serve.
