Vegetable yaki udon
Thick chewy udon noodles stir-fried with vegetables in a sweet-savoury sauce.

Ingredients
- 230 g Udon noodles
- 120 g Firm tofu
- 90 g Cabbage
- ¾ carrot Carrots
- ½ pepper Bell peppers
- 60 g Mushrooms
- 2 cloves Garlic
- 1 tbsp Soy sauce (reduced salt)
- ½ tbsp Oyster sauce
- 10 ml Mirin (rice cooking wine)
- 1 tsp Toasted sesame oil
- ½ tbsp Sunflower oil
Method
- Loosen the udon noodles in warm water if needed, then drain.
- Heat the oil in a wok, fry the tofu until golden, then push aside and stir-fry the cabbage, carrot, pepper and mushroom for 4 minutes.
- Add the garlic and udon noodles and stir-fry for 2-3 minutes, tossing to combine.
- Whisk the soy sauce, oyster sauce and mirin together, pour over and toss until glossy.
- Finish with a drizzle of sesame oil.
