Amritsari fish fry
Chunks of white fish coated in a spiced gram-flour batter and shallow-fried until crisp.

Ingredients
- 220 g White fish fillets
- 30 g Gram flour (besan)
- 4 g Ginger
- 1 clove Garlic
- 1 tsp Chilli powder
- ¼ tsp Turmeric
- ¼ lemon Lemons
- 1 tbsp Sunflower oil
- ½ tsp Salt
- 4 g Coriander
- 55 g Basmati rice
Method
- Cook the rice in twice its volume of water for 12 minutes, covered.
- Marinate the fish chunks with ginger, garlic, chilli powder, turmeric, lemon juice and salt for 15 minutes.
- Coat each piece in the besan, pressing gently so it sticks.
- Heat oil in a pan and shallow-fry the fish for 3-4 minutes a side until golden and crisp and cooked through.
- Finish with coriander and serve with the rice.
