Baked cod with olives, tomato and rice
Cod fillet baked over rice with tomatoes, olives and red onion.

Ingredients
- 180 g Cod fillets
- 1¼ tomatos Tomatoes
- 20 g Olives
- ¼ red onion Red onion
- ½ tbsp Olive oil
- 1 clove Garlic
- 50 g Basmati rice
- ¼ lemon Lemons
- 1 tsp Dried oregano
- ¼ tsp Salt
Method
- Simmer the rice in twice its volume of water for 12 minutes until nearly tender, then spread in a baking dish.
- Scatter the tomato, onion, garlic and olives over the rice and drizzle with half the oil.
- Season the cod, lay it on top and drizzle with the remaining oil and oregano.
- Bake at 200C for 18 minutes until the fish is opaque and flakes easily. Finish with lemon.
