Baked sardines with tomato and olives
Tinned sardines baked with tomato, red onion, olives and a squeeze of lemon.

Ingredients
- 150 g Sardines (tinned)
- 1¾ tomatos Tomatoes
- ½ red onion Red onion
- 20 g Olives
- ½ tbsp Olive oil
- 2 cloves Garlic
- 1 tsp Dried oregano
- ¼ lemon Lemons
- 150 g Potatoes
Method
- Layer the sliced potato in an oiled baking dish and bake at 200C for 15 minutes.
- Scatter the tomato, onion, garlic and olives over the potato and drizzle with the oil.
- Lay the sardines on top, season and sprinkle with oregano.
- Bake for a further 15 minutes and finish with a squeeze of lemon.
