Banh xeo (Vietnamese sizzling pancake)

Ingredients
- 60 g Rice flour
- 60 ml Coconut milk
- ¾ tsp Turmeric
- 70 g Pork tenderloin
- 70 g Prawns
- 80 g Bean sprouts
- 15 g Spring onions
- ¾ tbsp Sunflower oil
- 2 tsp Fish sauce
- 30 g Lettuce
- 6 g Mint
Method
- Whisk the rice flour, coconut milk, turmeric and 100ml water into a thin batter.
- Heat half the oil in a pan, stir-fry the pork and prawns for 3 minutes, then push to one side.
- Pour in the batter, swirl to coat the pan thinly, and cook 3 minutes until the edges crisp.
- Scatter over beansprouts and spring onion, fold in half and cook 2 minutes more until crisp underneath.
- Serve wrapped in lettuce and mint leaves with fish sauce for dipping.
