Pho bo (Vietnamese beef noodle soup)

Ingredients
- 75 g Rice noodles
- 120 g Sirloin steak
- ½ onion Onion
- 12 g Ginger
- ½ tsp Cinnamon
- ½ tsp Chinese five spice
- 2 tsp Fish sauce
- 40 g Bean sprouts
- 8 g Basil
- ¼ lime Limes
- ¼ red onion Red onion
Method
- Char the onion and ginger in a dry pan until browned, then simmer in 700ml water with cinnamon and five spice for 25 minutes.
- Season the broth with fish sauce and keep it at a rolling simmer.
- Cook the rice noodles in boiling water for 4 minutes, then divide between bowls with the raw sliced beef and red onion on top.
- Ladle the very hot broth over the bowls so it cooks the beef instantly.
- Serve with beansprouts, basil and lime wedges.
