Pho ga (Vietnamese chicken noodle soup)

Ingredients
- 75 g Rice noodles
- 150 g Chicken thighs (boneless)
- ½ onion Onion
- 12 g Ginger
- ½ tsp Cinnamon
- ½ tsp Chinese five spice
- 2 tsp Fish sauce
- 40 g Bean sprouts
- 8 g Coriander
- 6 g Mint
- ¼ lime Limes
Method
- Char the onion and ginger in a dry pan until browned, then add to a pot with 700ml water, cinnamon and five spice.
- Add the chicken and simmer 20 minutes until cooked, then lift out and slice, keeping the broth simmering another 10 minutes.
- Season the broth with fish sauce, strain if you like, and cook the rice noodles in boiling water for 4 minutes.
- Divide noodles between bowls, top with sliced chicken, ladle over the hot broth.
- Serve with beansprouts, coriander, mint and lime wedges.
