Xoi man (savoury sticky rice)
Savoury sticky rice topped with mung bean, crispy shallot and peanuts.

Ingredients
- 55 g Glutinous (sticky) rice
- 30 g Moong dal (yellow)
- 1 shallot Shallots
- 15 g Peanuts
- ½ tbsp Sunflower oil
- 10 g Spring onions
- ½ tbsp Soy sauce (reduced salt)
- ¼ tsp Salt
Method
- Soak the sticky rice for at least 1 hour, then steam over simmering water for 20 minutes until tender.
- Simmer the mung dal in water for 15 minutes until soft, then mash lightly and season with a pinch of salt.
- Fry the shallot in the oil until golden and crisp, keeping the flavoured oil.
- Pile the rice into a bowl, top with mashed mung dal, crispy shallot with its oil, peanuts and spring onion, and drizzle with soy sauce.
