Ingredients
- 3 slices White bread
- 2 eggs Eggs
- ¾ carrot Carrots
- ¼ cucumber Cucumber
- 8 g Coriander
- ½ tbsp Vinegar
- ¾ tsp Sugar
- ½ tbsp Sunflower oil
- ½ tbsp Soy sauce (reduced salt)
- ¾ chilli Green chillies
Method
- Toss the julienned carrot with vinegar and sugar and leave to quick-pickle for 10 minutes.
- Fry the eggs in the oil for 2 minutes until the whites are set.
- Split and lightly toast the bread, then drizzle with soy sauce.
- Fill with the fried eggs, pickled carrot, cucumber, coriander and chilli.
