Boerewors-style mince with pap
Spiced beef simmered in tomato gravy, spooned over soft maize pap.

Per serving, for one person.
Ingredients
- 150 g Lean beef mince (5%)
- 70 g Cornmeal
- ¾ onion Onion
- 100 g Chopped tomatoes (tinned)
- 1 clove Garlic
- 1 tsp Ground coriander
- ½ tsp Ground cumin
- ¾ tsp Paprika
- ½ tbsp Sunflower oil
- 80 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Whisk the cornmeal into 200ml boiling water and beat for 8 minutes until thick and smooth; keep warm.
- Fry the onion and garlic in the oil for 5 minutes, add the beef and brown for 6 minutes.
- Stir in the coriander, cumin and paprika, then add the tomatoes and stock.
- Simmer for 15 minutes until thickened, season and serve over the pap.
