Bunny chow (chickpea curry in bread)

Ingredients
- 200 g Chickpeas (tinned, drained)
- 2¼ slices White bread
- ½ onion Onion
- 80 g Chopped tomatoes (tinned)
- 1 clove Garlic
- 4 g Ginger
- 2 tsp Curry powder
- ¼ tsp Turmeric
- ½ tbsp Sunflower oil
- 100 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Fry the onion, garlic and ginger in the oil for 6 minutes until soft.
- Stir in the curry powder and turmeric and cook for 1 minute, then add the tomatoes and cook for 5 minutes.
- Add the chickpeas and stock, cover and simmer for 15 minutes until thickened.
- Hollow out the bread and spoon the curry in, season to taste and serve.
