Bombil fry (Bombay duck fry)
Delicate white fish coated in a light semolina crust and pan-fried until crisp, a Konkan classic.

Ingredients
- 180 g White fish fillets
- 20 g Semolina (rava/sooji)
- 45 g Basmati rice
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- ½ tbsp Sunflower oil
- ¼ lemon Lemons
- ¼ tsp Salt
Method
- Marinate the fish with turmeric, chilli powder, salt and lemon juice for 15 minutes.
- Press each piece into the semolina to coat both sides evenly.
- Heat the oil in a wide pan and shallow-fry the fish for 3-4 minutes a side until crisp and golden.
- Rinse the rice and simmer in twice its volume of water for 15 minutes until tender; serve alongside.
