Amboli (rice-lentil crepe)
Soft, fermented rice and urad dal crepes from the Konkan coast, thicker and spongier than a dosa.

Ingredients
- 40 g Rice flour
- 25 g Urad dal
- 1 tsp Cumin seeds
- 1 chilli Green chillies
- ½ tbsp Sunflower oil
- ¼ tsp Salt
- 3 g Coriander
Method
- Blend the soaked urad dal with rice flour, salt and enough water to a thick, pourable batter; ferment 6-8 hours.
- Stir in cumin, chopped green chilli and coriander just before cooking.
- Heat a griddle, pour a ladle of batter into a thick round and drizzle a little oil around the edge.
- Cover and cook on low heat for 3-4 minutes until the top looks set and the base is golden; serve warm.
