Egg bhurji pav
Mumbai-style spiced scrambled eggs with onion and tomato, scooped up with soft pav.

Ingredients
- 2 eggs Eggs
- 1½ pavs Pav buns
- ¼ onion Onion
- ½ tomato Tomatoes
- 1 chilli Green chillies
- ½ tbsp Sunflower oil
- 4 g Coriander
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Heat oil and cook onion for 5 minutes until soft, then add green chilli and tomato and cook until pulpy.
- Stir in turmeric and salt, then pour in the beaten eggs.
- Scramble over medium heat for 2-3 minutes, breaking the eggs into soft curds, until just set.
- Scatter with coriander and serve with warm, split pav.
