Jain-style poha
Onion-free flattened rice with peanuts, curry leaves and lime, gentle enough for a Jain kitchen.

Ingredients
- 70 g Poha (flattened rice)
- 15 g Peanuts
- 1 chilli Green chillies
- ½ tsp Mustard seeds
- 3 g Curry leaves
- ¼ tsp Turmeric
- ½ tbsp Sunflower oil
- ¼ lemon Lemons
- 5 g Coriander
- ¼ tsp Salt
- ¾ tsp Sugar
Method
- Rinse the poha briefly under running water until soft, then drain well.
- Heat oil and crackle mustard seeds, curry leaves and green chilli, then fry the peanuts until golden.
- Stir in turmeric, sugar and the drained poha with salt, tossing gently for 3-4 minutes over low heat.
- Finish with lime juice and chopped coriander before serving warm.
