Varan bhaat
The simplest Maharashtrian comfort meal: plain turmeric toor dal ladled over hot rice with ghee.

Ingredients
- 70 g Toor dal
- 60 g Basmati rice
- 1½ tsp Ghee
- 1 tsp Cumin seeds
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Rinse the toor dal and simmer in three cups of water with turmeric for 20 minutes until completely soft.
- Mash the dal lightly and season with salt, adding water to a pourable consistency.
- Rinse the rice and simmer separately in twice its volume of water for 15 minutes until tender.
- Heat the ghee and crackle cumin seeds, then stir into the dal.
- Serve the dal ladled hot over the rice.
