Kanda poha
Flattened rice tossed with onion, peanuts, turmeric and a squeeze of lime, Mumbai-style.

Ingredients
- 70 g Poha (flattened rice)
- 15 g Peanuts
- ¼ onion Onion
- 1 chilli Green chillies
- ½ tsp Mustard seeds
- 3 g Curry leaves
- ¼ tsp Turmeric
- ½ tbsp Sunflower oil
- ¼ lemon Lemons
- 5 g Coriander
- ¼ tsp Salt
Method
- Rinse the poha briefly under water until soft, then drain well and set aside.
- Heat oil and crackle mustard seeds and curry leaves, then fry the peanuts until golden.
- Add onion and green chilli, cook 5 minutes until soft, then stir in turmeric.
- Add the drained poha and salt, toss gently over low heat for 3-4 minutes until warmed through.
- Finish with lime juice and chopped coriander before serving.
