Spiced sprouted moong curry topped with crunchy sev, served with soft pav, a Mumbai favourite.

Ingredients
- 120 g Moong sprouts
- ¼ onion Onion
- ½ tomato Tomatoes
- 15 g Fresh coconut
- 1½ pavs Pav buns
- 15 g Sev
- ½ tbsp Sunflower oil
- 4 g Ginger
- 1 clove Garlic
- 1 tsp Chilli powder
- 1 tsp Garam masala
- ¼ tsp Turmeric
- 5 g Coriander
- ¼ tsp Salt
Method
- Heat the oil and cook the onion for 6-8 minutes until golden, then add the crushed ginger-garlic.
- Add tomato, coconut, turmeric, chilli powder and garam masala, and cook 6-8 minutes until pulpy.
- Add the moong sprouts and a cup of water, cover and simmer 12-15 minutes until tender.
- Season with salt and ladle into bowls, topping generously with sev and coriander.
- Serve hot with warm, split pav.
