Buddha's delight (luohan zhai)
A mellow braise of tofu, mushroom, cabbage and glass noodles in a light soy broth.

Ingredients
- 180 g Firm tofu
- 50 g Glass noodles
- 120 g Cabbage
- ¾ carrot Carrots
- 80 g Mushrooms
- 50 g Bamboo shoots (tinned)
- 6 g Ginger
- 1 tbsp Soy sauce (reduced salt)
- 1 tsp Toasted sesame oil
- 250 ml Vegetable stock
- 10 g Spring onions
Method
- Soak the glass noodles in warm water for 8 minutes until soft, then drain.
- Pan-fry the tofu cubes in a little oil until golden, then set aside.
- Simmer the cabbage, carrot, mushroom, bamboo shoots and ginger in the stock with soy sauce for 10 minutes.
- Return the tofu, add the glass noodles and simmer for a further 4-5 minutes.
- Finish with sesame oil and spring onion before serving.
