Cold sesame noodles
Silky wheat noodles tossed in a rich, nutty sesame-soy dressing with crunchy cucumber.

Ingredients
- 95 g Egg noodles
- ¼ cucumber Cucumber
- ¾ carrot Carrots
- 1½ tbsp Tahini
- 1¼ tbsp Soy sauce (reduced salt)
- ¾ tbsp Rice vinegar
- 1½ tsp Sugar
- 2 cloves Garlic
- 1¼ tsp Toasted sesame oil
- 1 tsp Chilli flakes
- ¾ tsp Sesame seeds
Method
- Cook the noodles according to packet instructions, then rinse under cold water and drain well.
- Whisk the tahini, soy sauce, rice vinegar, sugar, garlic, sesame oil and chilli flakes with 2-3 tbsp water into a smooth dressing.
- Toss the noodles through the dressing until well coated.
- Top with cucumber and carrot, and scatter with sesame seeds to serve.
