Pillowy steamed buns stuffed with cabbage, mushroom and tofu, a vegan dim sum staple.

Ingredients
- 90 g Plain flour
- ½ tsp Baking powder
- 90 g Cabbage
- 50 g Mushrooms
- 60 g Firm tofu
- 15 g Spring onions
- 5 g Ginger
- ¾ tbsp Soy sauce (reduced salt)
- 1 tsp Toasted sesame oil
- ½ tsp Sugar
Method
- Make a soft dough with the flour, baking powder and 45ml warm water; knead well and rest for 20 minutes.
- Stir-fry the cabbage, mushroom, tofu, ginger and spring onion with soy sauce and sesame oil for 4 minutes until fragrant; cool.
- Divide the dough into rounds, flatten each, spoon in filling and pleat closed into a bun.
- Steam the buns over simmering water for 15 minutes until puffed and glossy.
