Goan prawn curry
Plump prawns in a fragrant coconut and garlic curry, sharpened with tamarind, over rice.

Ingredients
- 180 g Prawns
- 30 g Fresh coconut
- ½ onion Onion
- 2 cloves Garlic
- ¾ tsp Tamarind paste
- 55 g Basmati rice
- ½ tbsp Sunflower oil
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- 4 g Coriander
- ¼ tsp Salt
Method
- Blend the coconut, onion, garlic, chilli powder and turmeric with a little water into a smooth paste.
- Heat the oil and fry the paste for 6-8 minutes until fragrant.
- Stir in the tamarind pulp and a cup of water; bring to a simmer for 5 minutes.
- Add the prawns and cook 4-5 minutes until pink and just cooked through; do not overcook.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the curry over the rice with coriander.
