Godeungeo jorim (Korean braised mackerel)
Mackerel braised with radish in a spicy, savoury gochugaru sauce.

Ingredients
- 180 g Mackerel fillets
- 100 g Radish
- 65 g Jasmine rice
- 2 cloves Garlic
- 6 g Ginger
- 2 tsp Gochugaru (Korean chilli flakes)
- 1 tbsp Tamari (gluten-free)
- 1¼ tsp Sugar
- 1 tsp Toasted sesame oil
- 100 ml Vegetable stock
Method
- Cook the rice according to packet instructions.
- Layer the radish in the base of a pan and place the mackerel on top.
- Whisk the garlic, ginger, gochugaru, tamari, sugar and stock together, and pour over.
- Cover and simmer for 15-18 minutes until the radish is tender and the sauce has reduced.
- Drizzle with sesame oil and serve with the rice.
